The paper introduces the development of the dairy farming of milch buffalo in China, and the physical, chemical, processing prop- erties and the current processing status of buffalo milk. The paper also describes the development of cheese in China, analyzing the conditions, advantages and prospects of developing buffalo milk cheese in South China. Finally, a scheme of developing buffalo milk cheese is proposed in the paper.
