摘要
用高压液相色谱法对胃癌高发区小咸鱼干中的酪胺进行了测定及其亚硝化以后的致突变性检测。结果发现其酪胺含量与致突变性之间有明显的相关性(r=0,993,P<0.01);并进一步用薄层色谱法对咸鱼干中的酪胺进行了确证。
ontent of tyramine was determined in salted and dried small fish collected from high-risk area of gastric cancer in Zhuanghe County, Liaoning Province with high pressure liquid chromatography,and its mutagenicity after nitrosification was assayed.Results showed content of tyramine in the fish corre-lated significantly with its mutagenicity(r=0.993,and P<0.01).And tyramine extracted from the fish was verified by thin layer chromatography.
