摘要
本文应用L-8500型氨基酸分析仪研究了明胶中氨基酸含量在氧化前后的变化。结果表明,轻度氧化条件下,蛋氨酸含量单调下降;当H_2O_2加入量恒定时,蛋氨酸含量随氧化时间的延长先是下降,一定时间后又开始回升。而在深度氧化条件下,蛋氨酸、酪氨酸、苯丙氨酸能全部被氧化,组氨酸也有90%以上被氧化。并且在建设性氧化与破坏性氧化之间确立了一条明显的界线。
In this paper, the variation of amino acid content in the gelatin before and after oxidation has studied by L-8500 type amino acid analyser. The results showed that in the condition of light oxidation methionine content decreased with additive amounts of hydrogen peroxide increased. Under the circumstances of depth oxidation, all of methionine, tyrosine, phenylalanine and 90% histidine has oxidized. The boundary line be-tween constructive oxidation and destructive oxidation has established.
