摘要
果汁冰淇淋原料中的牛奶与果汁、有机酸相遇时会发生蛋白质的凝固而影响冰淇淋的生产.本文提出了一种果汁冰淇淋的生产工艺,能防止这种凝固的发生,生产出具有纯正果汁风味的冰淇淋.
The production of fruit juice icecream should be influenced by the solidiying proteinthat formed when milk was mixed with fruit juice and organic accid.A technology process ofthe production of fruit juice icecream was introduced in this article by which the protein solidiying'could be avoided and the icecream that had pure fruit juice flavour could be obtained.
