摘要
本文采用原子吸收光谱法对哈尔滨市69种常用食品作了锌含量测定。结果表明,动物性食品中奶粉、蛋黄、牛肉、猪肝等含锌量较高;植物性食品中豆类及其制品、海产品等含锌量较高;茎叶类、果类含锌量甚微。动物性食品及豆类、海产品是食品锌的重要来源。哈市69种食品锌含量的测定为今后儿童平衡膳食的配制提供了科学依据。
The zinc content of 69 different kinds of commonly foods in Harbin was measured by atomic absorption spectrophotometer.The result showed that milk. egg yolk、beef、liver and bean product are the best source of zinc element.The result provided the scientific basis for making balanced diet in the future.
