黑米含有大量的天然黑(紫)色素,该文主要研究了该色素的提取方法及酸度、温度、光照等因素对其稳定性的影响。
The black rice containing a lot of natural black or red pigment. This paper reports a way to extract this natural pigment from the black rice and the effect ofacidity.temperature and light on the stability.
