摘要
紫红色甘蓝色素可从紫红色甘蓝老叶中提取.此色素属水溶性.色素溶液随PH值的改变而呈现出红、紫、蓝、绿、黄等多种颜色.其中pH=3色素液的最大吸收峰波长为525nm.它对日光、热、一般金属离子(Fe3+、Al3+除外)和多种添加剂有着一定的稳定性.具有一定的开发价值.
The purplish red wild cabbage pigment can be extracted from the overgrown leaves of the purplish red wild cabbage. Being water soluble, the pigment solution appears red, purple, blue, green, yellow etc. along with the variations of pH-value.When the pH-value equals three, the warelength of the maximum absorption peak is 525nm. The pigment solution still remains stable to sunlight, heat, general metal ions (except Fe3+ and Al3+) as well as varions kinds of additives. It is concluded that this kind of pigment has some developing value.
