摘要
食品加工高温灭菌后往往用水直接冷却。若食品成份进入冷却排水,则需对冷却水做适当处理方能循环复用。本文提出物理处理一间接冷却一消毒一定期清水置换循环复用流程。工艺简单,成本低,占地少,具备实用价值。
The food is usually cooling directly by water after exterminating bacteria in hightempereature in food processing. The cooling water should be treated properly before circu-lating use as some food components may be got into the cooling water. The circuit of physicaltreatment一indirect cooling一sterilization一exchange cooling water regularly is simpleintechnology and low in cost and less in land occupied as well as easy to practice.
