摘要
对甘薯粉丝进行冷冻加工,可以减少或消除粉丝的粘性,增强韧性,并有脱水作用.设计L16(44)正交试验,用综合加权法评定试验结果,研究了冻结温度、老化时间、冻结时间对冷冻效果的影响,提出了合适的冷冻参数.
Freeze processing of vermicelli sweet potato can
decrease viscidity and mois-ture,increase tenacity and have dehydration. By means of
L16(44)orthogonal experiment,the effect of freezing temperature,ageingtime and congealing
time on freezing results are studied;and with a synthetical weighted average methodthat the
experimental results are evaluated,and the optimal freezing parameters are provided.
