摘要
本文探讨了速溶茶冷冻干燥过程的机理,从干燥层(Ⅰ)和冻结层(Ⅱ)的微元能量衡算着手,提出了水汽仅从速溶茶上表面逸出时的冷冻干燥数学模型。通过模型的计算可了解到速溶茶在冷冻干燥过程中任一时刻和任一截面上的温度,为制定速溶茶冷冻干燥生产工艺提供技术参数。
A mathematical model of Instant-tea freeze drying with the water vapor passes through the surface of the frozen instant-tea is proposed in this paper.It can predicate the temperature of any section in dried layer or in frozen layer while freeze drying.According to the model the calculated results which the temperature of any section in dried layer is well consistant with experiment values.
