摘要
东方食品和西方食品都有各自的社会和文化背景,中国传统豆制品的营养价值极高,豆腐、豆浆、豆豉等豆制品的美味和价廉优势是商品开发时不可忽视的重要因素。我国近年对大豆食品开发主要偏向引进技术,研发对象偏向油脂化工,显然忽视了传统豆制品的开发,根源主要是没有认识到传统豆制品的潜在效益。
The nutritive value of the traditional soybean food is extremely high, and the developing of it rely mainly on introduce technology in recent years in China, the target of research and developing mainly oil chemical industry. Thus, ignored obviously the developing and the potential benefit of the traditional soybean food.
