摘要
本文报导了用高效液相色谱法连续两年测定山东主要栽培苹果总糖含量为8.92%~12.56%。其中果糖含量为5.44%,葡萄糖含量为2.82%,蔗糖含量为1.94%,决定品种差异的糖类为蔗糖。有机酸含量为0.76%~0.93%,其中苹果酸约占总酸84%,其余为琥珀酸、草酸、酒石酸、乙酸、柠檬酸。研究了气候、土壤条件、肥料对糖酸的影响,并根据测定结果提出鉴定苹果品系可用果糖/蔗糖或葡萄糖/蔗糖,果实品质分级指标应用甜味指数绝对值/总酸。
The total sugar content of the main apple cuitvars in Shandong was determined by high-performance liquid chromarography for two years in succession.The TSC accounted for 8.92%-12.56%,of which fructose 5.44%,glucose 2.82% and sucrose 1.94%, with the last being a main factor determining the differences among varieties.Organic acids ranged from 0.76% to 0.93%,with malic acid making up about 84% of the whole, and others were succinic,oxalic,tatraric, acetic and citric acids.The effects of climate, soil conditions and fertilzers were also studied.The contents of fructose/sucrose or glucose/sucrose are suggested for evaluating apple lines and the absoluts saccharinity,total acidity for grading of fruit quality.
