摘要
本文就嗜热链球菌和保加利亚乳杆菌发酵豆乳的最佳条件进行了探讨。结果表明:在含有5%蔗糖的豆乳中,当嗜热链球菌和保加利亚乳杆菌混合比例为1:1,豆固形物浓度为7%,添加剂A为2%,添加剂B为4%时,在43℃下发酵7h可获得较为满意的结果。
Optimal culture conditions for soybean milk fermentation by streptococcus thermophilus and Lactobacillus bulgaricus were determined. The results were satisfactory when Str. thermophilus and L. bulgaricus were cultured at 43℃ for 7h in soybean milk containing 5% sucrose, 7% solid matter, 2% addiuve A4% additive B4%, and the ratio of Str. thermophilus and L. bulgaricus was 1:1.
