摘要
依据我国食品中亚硝酸盐的含量及ADI值和毒理学有关内容提出食品中亚硝酸盐允许限量的卫生标准为:粮食(大米、面粉和玉米)3mg/kg;蔬菜4mg/kg;鲜鱼类3mg/kg;鲜肉类3mg/kg;鲜蛋类5mg/kg;酱腌菜20mg/kg;奶粉2mg/kg和精盐2mg/kg。
According to the nitrite contents of Chinese foods, ADl and toxicology data, the tolerance limits of nitrite in Chinese foods were suggested. They are 3mg/kg for cereals (rice, whent flour and corn), 4 mg/kg for vegetables, 3 mg/kg for fresh fish and fresh meat, 5mg/kg for fresh egg,20mg/kg for pickled vegetables,2mg/kg for milk powder and 2mg/kg for refined salt.
