摘要
测定了秦岭南坡西段当年核桃仁中的蛋白质、脂肪、维生素,发现核桃仁蛋白质中氨基酸种类比较全面,有很高的营养价值和保健作用,并从营养学的角度阐述了核桃仁中几种主要营养成分及氨基酸对人体的重要生理功能。
Basic test discovered that the fresh kernel of walnut in south side west section of Qinlingmountain area contains many kinds of Proteins, Fats, Fatty acid and Vitamines. It is also recovered that there is a complete set of Amino acid in the proteins contained, which is valuablein the point of nutrition and health protection. Detailed nutrologic description has been made inboth components analysis of the kernel and the important physiologic functions of the Aminoacid in the kernel.
