川西北高原山谷地区藏山羊屠宰性状研究 被引量:7

摘要 川西北高原山谷地区藏山羊,在全放牧无补饲条件下,暖季末对其产肉性状,肉的品质,内脏器官,母羊生殖器官,脂肪碘值和内分泌腺体等项目进行屠宰测定:屠宰率(%)周岁阉,母羊和成年阉,母羊分别为45.69±0.61,15.58±0.51和18.48±0.58,44.63±0.65;净肉率(%)分别为33.06±0.43,38.25±4.66和34.93±0.50,30.53±0.44;熟肉率(%)分别为58.95+1.07,59.15±1.66和62.91±2.56,60.47±3.01;眼肌面积相应为8.43±1.20,6.12±0.93和9.01±3.4,7.54±2.68cm ̄2;内脏器官,母羊生殖器官和腺体随年龄增长绝对重量增加,相对重量差异不大;肾脂肪碘值周岁和成年母羊分别为18.21±2.10和20.92±7.09g/ml;.总能量周岁阉,母和成年阉,母分别为1.524,1.675和1.650,1.644MJ/kg;粗脂肪(%)相应为3.0,3.5和4.5,4.0;粗蛋白质(%)相应为20.6,20.2和21.4.20.9;肌肉中必需氨基酸含量(%)相应为9.56,8.83和7.55,7.76.藏山羊具? The experiment is earried out at the end of warm season. Under the condition of complete farming and no supplementation, Tibetan goat of mountain valley type in the northwest plateau of Sichuan province is used for the determination of meat characteristics and qualities. Dressing percentage of bucks, one -year-old does, adult bucks and does is 45. 69±0.64,45.58±0.51 and 48.48±0.58,44.63±0. 65;Net meat percentage(%)is 33.06±0.43, 38.25±4. 66 and 31 93±0.50,30.53±0.44;cooked meat percentage(%)is 58.95±1.07,59.15±1.66 and 62. 91±2.56,60. 17±3. 01;loin-eye area is 8.43±1.20,6.12±0.93 and 9.01±3.44,7.51±2.68cm ̄2;Theweight of internal organs, generative organs and endocrine glands of does increases with ages, however,the relative body weight changes little. The kidney-fat iodine value of one-year-old or adult goats is 18.24±2.10and 20.92±7.09g/ml; total enegy of bucks, one-year-old does,adult bucks does is 1.524,1.675and 1.650,1.644MJ/kg,erude fat(%)is 3.0,3.5 and 4.5,4.9;Coarse protein(%)is20.6,20. 2and 21.4 ,20.9;Essential amino aeide eoncentration (%)in musle is 9. 56,8. 83 and 7. 55,7.76.The results show that tibetan goat of mountain valley type is of meat properties and qualitiesand is good enough as a nutritions food.
