摘要 L-苹果酸是体内Krebs循环的成员之一,也是氨基酸输液的组成之一,对肝功能异常尤其是高血氨症具有良好的疗效:作为酸味剂广泛应用于果汁,汽水、糖果等食品生产。 In order to establish an efficient process for continuous production of L-malic acid using immobilized enzymes and microbial cells, several microorganisms were screened and cultural conditions of selected microorganism were investigated. Among the microorganisms tested, B. species 865 showed the highest activity of fumarase. The most optimal medium for the fumarase formation was composed of 3% corn steep liquor, 3% diammonium citrate, 0.2% KH_2PO_4 and 0.05% MgSO_4·7H_2O, pH 7.0.
