摘要
本文研究了从十字花科植物芥菜的种籽中提取具有强烈辛辣味丙烯基芥末油的生产工艺。并在大量试验的基础上,提出了“水解──油萃”法生产丙烯基芥末油的新的生产工艺。
Allyl mustard oil is a mixed pungent odour flavour oil. In the paper,a technological process of allyl mustard oil from mustard seed (Brassica juncea) is described. According to the results of experiments, the method of water-distillation under the atmospheric pressure and temperature is not that of obtaining allyl mustard oil, but the method of hydrolysis──oilextraction is.
