Detoxification for Rapeseed Meal

菜籽蛋白是一种优质蛋白质资源。但由于在菜籽中毒性物质——硫代葡萄糖甙的含量较高,使这一蛋白资源的利用受到了限制。因此,菜籽脱毒已成为国内外广大科学工作者较为重视的研究课题之一。本文所阐述的就是国外几种菜籽脱毒方法。即:微生物脱毒法、酸碱降解法、溶剂浸出法和自动酶解法。这些方法具有简单易行、脱毒效果好的特点,适合应用于我国的具体情况。

Rapeseed meal is an excellent source of protein, however,its use is severely limited, mainly due to the presence of glucosinnolates. Thus,detoxification of rapeseed products is attracting greater attention now than any other time in the past. A variety of processes have been reported for the removal of glucosinolates from rapeseed products. Detoxification by treatment with microorganismus, acid or base, extraction with water and 70% aqueous acetone, autolysis of ground rapeseed followed by defatting with hexane or acetone were described in this work.
