摘要
本文主要研究对含嗜乳杆菌浓缩发酵乳饮料的生产工艺过程。实验结果表明单菌培养制备生声发酵剂,混菌发酵的工艺是可行的。发酵乳中L.acidophiltus的活菌数达108cfu·mL(-1)以上.发酵的最佳工艺备件是S.thermophilus:L.acidophilus=1:3,接种量6%.发酵的终点指示是pH≤4.3.OD≥5.0,发酵时间4~56h。
This paper has made studies about the processing technique of Condensing-fermented milkbeverage with L. acidophilus. The results of experiment show that the preparation for bulk starter withsingle-strain culture and fermentation process with mixed-strain Cultures are feasible. The viable cellcounts of L. acidophilus in the fermented milk can be reached the level of 10 ̄9mL ̄ (-1). The optimunconditions are as follows: S. thermophilus: L. acidophilus= 1: 3, inoculum 6%, final paint PH≤4. 3.OD≥5. 0, fermented time 4 to 5 hrs. etc.
