摘要
利用气相色谱／质谱联用技术及电子轰击电离和化学电离方法，对冬瓜果肉中游离的１７种氨基酸衍生物进行了定性分析。总结出了氨基酸衍生物的ＥＩＭＳ及ＣＩＭＳ的开裂规律，鉴定出了三种非蛋白质氨基酸，分别是２－氨基－３－氰基丙酸、丁氨酸和２－氨基－４－烯己酸，同时为气相色谱法分析提供定性依据。
Free amino acids in pulp of Benicasa hispe Logn.were turned to N-PFPA iso-propyl ester derivatives.17 kinds of amino acid derivatives,3 of which are not included in protein, have been determined by GC/MS techniques. Also,the fragmentation pathways of these amino acid derivatives under electron impact and chemical ionization conditions were discussed.
