摘要
利用气相色谱/质谱联用技术及电子轰击电离和化学电离方法,对冬瓜果肉中游离的17种氨基酸衍生物进行了定性分析。总结出了氨基酸衍生物的EIMS及CIMS的开裂规律,鉴定出了三种非蛋白质氨基酸,分别是2-氨基-3-氰基丙酸、丁氨酸和2-氨基-4-烯己酸,同时为气相色谱法分析提供定性依据。
Free amino acids in pulp of Benicasa hispe Logn.were turned to N-PFPA iso-propyl ester derivatives.17 kinds of amino acid derivatives,3 of which are not included in protein, have been determined by GC/MS techniques. Also,the fragmentation pathways of these amino acid derivatives under electron impact and chemical ionization conditions were discussed.
