摘要 脂肪酶在油脂改性工业前景广阔。但工业化应用还面临着一定的问题。本文综述了油脂改性的复杂性和工程技术方面存在的问题。 he prospect of lipase in the oil-fat modification industry is very vast. But problems still exist in the process of industrialization. In this paper the problems in the complexity of oil-fat modification and engineering technology have been reviewed.
