黄喉拟水龟含肉率及肌肉营养成分分析

Analysis of Muscle Nutrients and Muscle Contents of Yellow Pond Turtle (Mauremys mutica Cantor)

分析了黄喉拟水龟成龟的含肉率及肌肉营养成分。结果表明:成龟的含肉率平均为23.4%,内脏平均占体重的14.0%,骨骼平均占体重的39.4%,血液和体液平均占体重的18.4%,脂肪块变动较大,平均占体重的5.0%;肌肉中各物质质量分数平均为:水分79.7%,灰分1.0%,粗脂肪0.3%,蛋白质18.2%;在肌肉16种氨基酸中,必需氨基酸质量分数平均为6.69%,氨基酸总量平均为14.9%;在测出的18种脂肪酸中,不饱和脂肪酸含量平均占64.77%,高度不饱和脂肪酸平均占22.91%。在分析的基础上,本文讨论和评价了黄喉拟水龟的食用价值,为其配合饲料的研究开发提供了基础数据。

Muscle nutrients and muscle content of market size of yellow pond turtle （Mauremys mutica Canter） were analyzed. The results show that the muscle content is 23.4% , the fat content is 5.0% , the infernal organs content is 14.0%, the skeleton content is 39.4% , the blood and body liquid contents is amino acids（AA） ,18.4%. In their muscle, the moisture is 79.7% , ash is 1.0% , lipid is 0.3% and protein is 18.2%. In 16 amino acids （AA）, tested in muscle, the total amount of （EAA） is 6.69%, the total amount of AA is 14.9%. From 18 fatty acids tested in muscle, the UFA content is 64.77% , the HUFA content is 22.91%. This paper also evaluated the value of yellow pond turtle as a food and provided the element data for developing the artificial feed of yellow pond turtle.
