摘要
为提高魔芋葡甘露聚糖(KGM)的溶解度,研究了酸酶结合法水解KGM的工艺条件。在最佳条件下,水解率为20.65%;产品收得率为59.54%;多数水解产物分子的大小在三糖以上。
The hydrolysis conditions of Konjan Glucomana (KGM) by combining with Acid and Enzyme are studied bo improve its solubility.The results showes that the hydrolytic ratio is 20.65% and yield is 59.54% under the optimus condition.The majority of molecular size is larger than those of trisaccharide in the hydrolysate.
