中国梨（晚香梨）贮藏特性的研究

STORAGE CHARACTERISTICS OF CHINA PEAR (WANXIANG LI)

研究了晚香梨的贮藏特性．结果表明，晚香梨贮藏期间硬度下降缓慢，伴随ＰＧ活性的上升，可溶性固形物、总糖、可滴定酸度均呈下降趋势。而低温比常温下降缓慢。０～１℃的低温贮藏与１３５～１７℃的常温贮藏相比，有很大优势。１）呼吸强度很低，不超过４ｍｇＣＯ２／ｋｇ·ｈ。常温下梨果的呼吸强度几乎是低温贮藏果的５．５倍；２）可明显地延缓果实的后熟过程，低温下呼吸高峰的出现比常温下推迟了近一个月，且峰值很低；３）营养物质损失较少；４）在低温下可贮藏６～７个月，未发现任何生理障害。实验证明，晚香梨适宜的贮藏条件是０～１℃，聚乙烯薄膜包装。

This experiment studied the storage characteristics of Wanxiang Li. The result showed that the flesh firmness decreased slowly associated with the increase in PG activity and soluble solid, total sugar and titratable acid had the tendency to decrease. The decreasing rate was slower at low temperature than it was at normal temperature.Low temperature storage at 0￣1℃ was much better than normal temperature storage at 13.5￣ 17℃ in that 1) The respiration intensity was not more than 4 mg CO2/ kg. h. and the The respiration intensity of pear fruit at normal temperature was almost 5.5 times of that at low temperature. 2) The post-ripening. Stage was delayed significantly. The time for CRR (climacteric rise of respiration) appearance at low temp. was one month later than at normal temperature and the peak value was lower. 3)Less nutrients were lost 4) The pear was stored at low temperature for 6￣7 months no physiological injury was observed.In conclusion the suitable storage temperature for Wanxiang Li is 0￣1℃. and the good package material is the polyethylene bag.
