黑龙江省山核桃仁的营养成分分析

THE NUTRITIVE COMPONENTS ANALYSIS OF THE KERNEL OF PECAN OF HEI LONG JIANG PROVINCE

采用化学分析与仪器分析相结合的方法，对黑龙江省山核桃仁的营养成分、蛋白质及其中的氨基酸组成，无机元素及油脂中的脂肪酸组成进行分析．结果表明，黑龙江省山核桃仁含有较高的蛋白质２３．３４％及油脂６１．６％，油脂中的脂肪酸组成，以不饱和脂肪酸为主，占８３．５％，有较高的营养价值，有必要进行开发利用。

The nutritive components: protein, amino acids, inorganic elements and fatty acids in fat of the kernel of pecan of Hei long jiang Province had been analyzed by chemical and instrumental method. The results prove that the kernel of pecan of Hei long jiang Province contents hign protein (23.34%) and fat (61.6%). In addifion there are very hign componets of unsaturated fatty acids (83.5%) in fat. therefore, the Kernel of pecan has good nutritive values. It is necessery for us to develop and utilize it.
