摘要
目的:分析鸡腿菇的营养成分。方法:水分和灰分含量采用重量法测定,蛋白质含量采用比色法测定,多糖含量采用苯酚硫酸法测定。结果:总糖含量为57.65%,还原糖含量为53.54%,蛋白质含量为24.45%,粗脂肪2.82%,粗纤维2.78%,灰分含量为10.8%,水分含量为0.2%。结论:本法操作简便、结果可靠,测得鸡腿菇中含有丰富的糖类、蛋白质及多种矿物元素,具有较高的食用价值和药用价值。
The content of water and ash was determined by gravimetric method. The content of protein was quantified by colorimetric method and the content of polysaccharide was done by phenolsulfuric method. The results are as follows: total-sugar of 57.65%, reducing-sugar 53.54%, protein 24.45%, crude fat 2.82%, crude fiber 2.78%, ash 10.8%, water 0.2% . All these indicate that Coprinus comaus (Mull.ExFr.)Gray has a high value from pointview of both food and medical value.
