摘要 膳食纤维的功能是近年来研究的热点,而功能与其结构是密切相关的。基于此,文章主要回顾了原子力显微镜这种新型的研究手段在膳食纤维结构及其功能研究中的应用情况,并详细介绍了原子力显微镜在纤维素、木质素、果胶、树胶等膳食纤维结构研究中的一些初步成果。 Research on the function of dietary fiber is popular recently, and the structure has a very close relationship with its function. This paper introduces the progresses in the research of dietary fiber with atomic force microscopy in order to explore dietary fiber's function better and ends with the prospects for the application of AFM in dietary fiber.
