摘要  姜酚[1-(3′-甲氧基-4′-羟基苯)-5-羟基-3-脂肪酮类]是生姜中的活性成分,呈现生姜的典型辣味.因其分子中有β-羟基酮结构,理化性质极不稳定;其含量因产地、炮制方法等贮存加工条件不同而不同(一般质量分数为1%~3%).现代医学研究证实姜酚有强心、防治心血管疾病、抗凝血、抗氧化、抗肿瘤、抗炎、抗溃疡、止呕、止晕、抑制前列腺素合成、预防胃黏膜损伤、利胆、防腐杀虫、驱虫、护肤美容等十几种生物活性;姜酚参与生物代谢,其毒性较低.姜酚可作为评价生姜及其药物品质的客观指标,也可开发为药物或用于生产保健食品. Gingerels[ 1 - (3′- methoxyl- 4′- hydroxybenzene) - 5 - hydroxy - 3 - aliphat- ic ketone ] are the compounds of the bioactivities and the principles in ginger ( Zingiber officinal Roscoe). The contents of gingerols vary with the different agricultural operation and processing methods and are often 1% - 3 % based on the dried weight. It has been shown that the gingerols have the effects of cardiotonic action, antiplatelet, antioxidation, antitumor, anti - ulcer, antiemefic, curring morning diseases, inhibition of insect and microorganism, molluscicida and so on. The gingemls can take part in the metabolism in the liver and their toxicity to living things is low. The gingemls can be used in the healthy food, medicine, inseetcide and so on.
