摘要 [目的]了解市属饮食行业食(饮)具卫生状况。[方法]2004年510月对龙岩市属饮食行业食(饮)具:碗、盘、碟、筷、汤匙和杯子等进行监测。[结果]监测食(饮)具共1221份,合格804份,合格率为65.85%。其中以蒸汽消毒效果最佳,合格率为85.75%,臭氧消毒柜效果最差,合格率仅为48.25%。[结论]龙岩市食(饮)具卫生状况不容乐观,卫生监督部门应加强对饮食行业监督检查,提高监督频次,加大执法力度,把好病从口入关,以防食源性疾病的发生。 [Objective]To understand the hygienic condition of tableware. [Methods]Tableware such as bowl, plate, small dish, chopsticks, soupspoon and cup were monitored in May-October , 2004. [Results]Only 804 (68.85 %) tableware were qualified among 1 221 tableware monitored, the best effect was by the steam disinfection, the qualified rate was 85.75 %; The ozone disinfection effect was worst, the qualified rate was 48.25 %. [Conclusion]The tableware hygienic condition is unoptimistic, the supervision department should strengthen inspection, increase surveillance frequency, enhance the execution of law, and prevent the occurrence of food-borne diseases.
