反胶束体系中酶催化蔗糖水解的动力学研究 被引量:2

摘要 研究蔗糖酶分别在反胶束和水相中催化蔗糖水解反应的动力学,得出反胶束体系的表观米氏常数和水核内的米氏常数为0.213 mmol/L和2.46 mmol/L.另外由实验数据求出了反应的活化能、吉布斯自由能变、活化焓变和活化熵变.通过比较在水相和反胶束体系中得到的动力学数据得出反胶束体系中的催化效果优于水相中的催化效果. The kinetics of sucrose hydrolysis catalyzed by enzyme in both reverse micelles and aqueous solutions was investigated, respectively. The result showed that K m,app and K m,w is 0. 213 mmol/L and 2.46 mmol/L, respectively. And also the activation energy, the free energies of activation, the enthalpies of activation and the entropies of activation were gained from the rate constants. By comparing the thermodynamic datas in the two solutions, it was found that the enzyme efficiency in reverse micellar solution is higher than that in aqueous solution.
