摘要
本文以NaHCO3溶液为提取剂,在室温下进行板栗壳色素的提取。探讨了板栗壳色素在拟巧克力奶和拟巧克力蛋糕中的应用。研究结果表明:板栗壳色素与淀粉和蛋白质的染着性好,着色稳定,与主要食品原料和添加剂有较好的混用性,对产品品质无不良的影响,是一种实用性较强的天然色素。
Pigment in chestnut shell was extracted by sodium bicarbonate, extracting agent at room temperature. Application of the brown pigment in mimic chocolate milk and mimic chocolate cake was discussed. The result showed that dyeability of the natural brown pigment with starch and protein was good, so was the stability of the pigment; the pigment could mix well with main food materials and additives and couldn't do any harm to the quality of the products. So pigment in chestnut shell is a kind of natural pigment of high practicality.
