摘要
用紫外灯照射红曲黄色素-红曲素的甲醇溶液至无色,采用质谱、核磁图谱和红外图谱分析,鉴定其褪色后物质的分子式为C15H22O5,根据光化学理论分析,提出了红曲素的光褪色机理。
