摘要
反式脂肪酸是一种具有反式构型的不饱和脂肪酸,现代研究表明,它对心血管疾病、糖尿病及胎儿生长发育等会产生不利影响。本文从反式脂肪酸的结构、性质、食物来源及如何降低TFA等方面进行综述。
Trans fatty acids (TFA) is a kind of unsaturated fatty acids with isomeric configuration. Recent research indicates that high intake of trans fatty acids in the diet has adverse effect on cardiovascular disease, type Ⅱ diabetes, fetal growth and development et al. This article gave an overview of TFA on its structure, properties, source, and the way to lower TFA.
