摘要
原子力显微镜如今由于其分辨率高,成像迅速,样品预处理简单且可在实际环境中成像等诸多优点而被广泛应用于生物及食品科学中。本文就原子力显微镜在食品科学中的研究进行了综述。
Atomic Force Microscopy is widely used in the research of biology and food science because of its ability to rapidly produce images with high resolution from material that has undergone minimal preparation under realistic environment. This paper summarized some application of Atomic Force Microscopy in food science.
