摘要
阐述了气调包装技术应用于食品保鲜中的原理、应用历史及发展现状。特别介绍了气调包装技术在中式方便菜肴保鲜中的应用。
The principle, application history and developing status in the keeping fresh on foods with MAP (Modified Atmosphere Package) technology was expatiated. Specially, an application of MAP technology on the keeping fresh of Chinese snack dishes was introduced.
