摘要
对火棘色素的提取及其稳定性进行了研究,结果表明:火棘色素易溶于水、乙醇,不溶于丙酮、二氯甲烷等,适宜用酸性乙醇溶液提取;对热较稳定,但不耐60℃以上的温度;pH值对其影响较大,适宜在酸性条件下使用;金属离子、氧化剂、还原剂和糖对其有一定的影响。
The extraction and stability of the pyracantha fortuneana pigment were studies. The results showed that the pigment was soluble in water and ethanol and insoluble in other organic solvent such as acetone or dichloromethane etc. The optimum extraction solvent was acidic ethanol. The pigment was stable below 60℃ , but it was sensitive to metallic ions, oxidizer,reducing agents and saccharides.
