摘要 该文分析微生物脂肪酶催化机制,综述脂肪酶基本酶学性质,包括最适作用温度、最适pH值、抑制剂及反应介质影响等,并对其研究现状和今后研究重点进行讨论。 This paper analyzed the mechanism of action of microbial lipases, and summarized their basic enzymatic properties, which included the optima reaction temperature, the optima pH, inhibitors and the effect of media. The present situation and the emphasis of future study were also discussed in this paper.
