摘要
运用DNP+TWEEN80柱和BDS10%+Shimalite柱对凤香型酒、清香型酒、浓香型酒的代表酒样中的主要香味成分进行了分析和比较,结果表明,风香型酒和清、浓香型酒在乙酸乙酯.己酸乙酯、乳酸乙酯、丁酸乙酯、正丁醇、仲丁醇、乳酸、丁酸、己酸等主要成分上存在着较大差异.凤香型酒中,乙酸乙酯和己酸乙酯具有特殊的比例关系和绝对含量,其比值平均为1:0.26.绝对含量分别为100-160mg/100ml和20-40mg/100ml。
The main fragrance of Feng Wine,Qing Wine and Nong Wine is analysed bychromatographic columns of DNP +TWEEN 80 and BDS+shimalite.The different fragranceamong Feng Wine and other famous wine is:Ethyl acetate,Ethyl butyrate,Ethyl lactate,Ethyl hexanoate,Butyl alcohol,sec-Butyl alcohol,Lactatic acid,Butyric acid,Hexanoicacid.In Feng Wine,there are special ratio and content between Ethyl acetate dnd Ethyl hex-anoate.The ratio is 1:0.26,the content is 100-160 mg/100ml and 20-40 mg/100ml.
