摘要
为预防黄酒非生物浑浊,利用DHG澄清剂在黄酒中除浊,用量为300 mg/kg。通过将澄清剂用软水溶解(1∶10),加入酒中并搅拌均匀,冷冻静置24 h后,经过滤、灭菌和灌装,可降低黄酒中的总氮和固形物含量,提高黄酒对蛋白质的稳定性,以及改善黄酒的感官质量。
DHG clarifier can be used to clear the turbidness in millet wine. Its suitable dose is 300mg/kg. Dissolved with soft water (1: 10), DHG clarifier is mixed with millet wine, and then gets the cold storage for 24h. After the process of filtration, sterilization and canning, the content of total nitrogen and solid particles can be reduced; the protein's stability of millet wine and its quality can be also improved.
