中国和韩国产芝麻的化学成分比较研究 被引量:6

摘要 对韩国品种种植于韩国(KvKc),中国品种种植于中国(CvCc),和中国品种种植于韩国(CvKc),韩国品种种植于中国(KvCc)等4种芝麻样品的化学成分进行了比较。4品种芝麻的出油率分别为47.8%,48.8%,48.6%和46.3%。色度检测(L值),KvKc和CvCc芝麻油表现为暗褐色,而KvKc颜色较浅。KvKc和CvCc芝麻油中的中性脂质、聚脂和磷脂含量分别为93.2%,6.6%,0.2%和94.7%,4.6%,0.8%。KvKc和CvCc中主要为不饱和脂肪酸,如油酸和亚油酸,二者总脂肪酸组成几乎相同,为84.6%,而KvKc中油酸和亚油酸组成为47.1%和37.5%,CvCc中为46.5%和44.3%。必需氨基酸的含量,CvCc和CvKc分别是428mg%和391mg%,比韩国品种的芝麻中的含量要高。 Sesame samples used in this study were korean varitey cultivated in Chochiwon City of Korea (KvKc), Chinese variety cultivated in Changchun City (CvCc), Chinese variety cultivated in Korea (CvKc) and Korean variety cultivated in China (KvCc). The extraction yields of sesame oil from KvKc was lower thant that of CvCc and KvKc sesame oil showed dark brown color. The composition of neutral lipid, glycolipid and phospholipid of free lipids from KvKc and CvCc sesame oils were 93.2 %, 6.6 %,0.2 % and 94.7 %, 4.6 %, 0. 8% respectively. Major fatty acid of KvKc and CvC, c sesame were unsaturated fatty acids, such as oleic and linoleic acid. Total composition of the two major fatty acids of KvKc was 84. 6%, which was almost same with that of CvCc. However the composition of oleic and linoleic acid of KvKc were 47. 1 % and 37.5 %. while the composition of CvCc were 40. 5 % and 44.3 %. The contents of amino acids from CvCc and CvKc are 428mg% and 391mg%, respectively, which is much higher than the Korean vareities.
