摘要
本文初步研究了纯度为91.2%的芝麻素的抗氧化性和体外消除自由基的能力,结果表明芝麻素具有一定的抗氧化性,对DPPH.、.0H、O2-.有消除作用,并探讨了芝麻素的抗氧化机理。
It has been showed from Schaal oven test and Rancimat experiments that sesamin in oil possesses certain antioxidant activity. The free radical scavenging capacity of sesamin was investigated. The results show that sesmin is capable to scavenge the free radicals, DPPH · , · OH, and O2^-·, The mechanism of the antioxidant activity of sesamin is discussed on the basis of sesamin molecule structure.
