摘要
大曲的火圈是美拉德反应的产物,水圈是培养后期由于掉温而产生。实践中,水圈、火圈往往相伴而生。在凤型曲的生产中,严格执行“三关两则”,恰当地掌握曲料的面积和水分以及培养后期热量散发速度和水分挥发速度间的关系,就能有效地避免水圈、火圈的产生。
The fire cycle ofXifeng Daqu was the outcome of Mallard reaction and the water cycle was produced in the late culture stage by temperature drop. In practice, fire cylce often occurred with water cycle. In order to avoid effectively the appearance of fire cycle and water cycle, “Three key operation points and two operation principles” should be strictly followed in the production ofXifeng Daqu. Besides, proper control of the area of starter materials and the moisture content and appropriate understanding of the relations beween heat spread speed and water volatile speed also played important roles.
