摘要
辣椒红色素是一种优质天然类胡萝卜素。广泛应用于食品、医药、保健品、化妆品及嗜好品工业中。本文综述了国内外辣椒红色素研究的理化性质、稳定性、提取工艺及应用和生产现状,并对其发展前景作出了展望。
Capsicum red pigment is regarded as a kind of very useful nature pigment,it has used widely in food additives, medicine, health protection products and cosmetics. In this paper, the characteristics, stability, main methods of extraction, application and production of Capsicum red pigment were presented, and its application was prospected.
