摘要 大蒜为各国人民广为食用,具有解毒、抗癌、抗老化、抗动脉粥样硬化和冠心病等作用,其关键是抗氧化作用。它能有效地清除活性氧(ROS),阻断LDL的氧化和脂质过氧化物的形成;并能明显升高机体谷胱甘肽过氧化物酶、谷胱甘肽还原酶、谷胱甘肽-S-转移酶和超氧化物歧化酶的活性,从而有效地提高内源细胞的抗氧化防御能力,清除、阻断自由基/活性氧对机体造成的过氧化损伤。本文综述近年来国内外大蒜抗氧化作用的研究进展。
