贵州粒用苋营养品质研究

ANALYSIS ON NUTRIENT COMPONENT OF AMARANTHUR GRAIN IN GUIZHOU

对贵州粒用苋营养品质研究结果表明，贵州粒用苋８１份地方品种籽粒蛋白质含量在１０．１５％～２２．６４％，平均为１５．８６±１．５８％，变异系数９．９６％；１８种氨基酸总量平均为４８３２．９６ｍｇ／ｇ￣Ｎ（每克氮的氨基酸含量），必需氨基酸含量占总量的３９．４２％；脂肪平均含量为５．４０±０．７４％，变异系数为１３．７％。从氨基酸分结果表明，贵州粒用苋具有较高的营养价值。

The analysis results of nutrient components of 8l local amaranthus grain varieties in Guizhou showedthat protein content in seeds waswithin a range from l0.15%to 22.64%,with l5.86± l.58%in average,and its coefficient of variation was 9.96%;The average total content of l8 amino acids was 4832.96 mg/gN(amino acid conten of per gramme nitrogen),in which the content of necessary amino acids accounted to39.40%。The average fat content was 5.40±0.74%with l3.7%of coefficient of variation,The ratio ofamino acid were also calculated,it presented that local amaranthus grain varieties in Guizhou were rich nutri-Tion.
