贵州粒用苋营养品质研究

摘要 对贵州粒用苋营养品质研究结果表明,贵州粒用苋81份地方品种籽粒蛋白质含量在10.15%~22.64%,平均为15.86±1.58%,变异系数9.96%;18种氨基酸总量平均为4832.96mg/g ̄N(每克氮的氨基酸含量),必需氨基酸含量占总量的39.42%;脂肪平均含量为5.40±0.74%,变异系数为13.7%。从氨基酸分结果表明,贵州粒用苋具有较高的营养价值。 The analysis results of nutrient components of 8l local amaranthus grain varieties in Guizhou showedthat protein content in seeds waswithin a range from l0.15%to 22.64%,with l5.86± l.58%in average,and its coefficient of variation was 9.96%;The average total content of l8 amino acids was 4832.96 mg/gN(amino acid conten of per gramme nitrogen),in which the content of necessary amino acids accounted to39.40%。The average fat content was 5.40±0.74%with l3.7%of coefficient of variation,The ratio ofamino acid were also calculated,it presented that local amaranthus grain varieties in Guizhou were rich nutri-Tion.
