In the development of fast food of catering trade, the cold chain of assorted food, such as low-temperature processing and cold chain circulation,is the only way. The construction of complete and eligible cold chain is the guarantee for sanitation, greenness and taste of food and pre-produced foods. In comparison with delivery method of hot chain preservation over 70?C, cold chain has some advantages including lowcosts and convenient operation.
