摘要
以毛霉M263为出发菌株,经紫外线、γ-射线及高温处理复合诱变,并采用高温培养条件定向驯化,获得1株耐高温毛霉菌株M263-3.该菌株在32℃条件下,生长正常,酿制的腐乳质量优良;进行了培养基及产酶条件试验,选出了最佳培养基及适宜的培养条件。
A high-temperature resistant strein M263-3 was obtained from the mutiple mu-tants of Mucor M263 treated with ultraviolet ray,γ-ray and high temperature when the muti-ple mutants were bred under the condition of high temperature. The strain can regularly growat 32℃ and produce good quality bean curd milk.The best nutrient medium and proper cul-ture conditions for M263-3 were selected by test of proteinase activity.
