贮藏温度对双孢蘑菇采后生理和品质的影响 被引量:49

摘要 研究了不同贮藏温度及贮藏过程中温度波动对双孢蘑菇采后生理和品质的影响。结果表明,低温可以抑制双孢蘑菇采后开伞、呼吸强度、PPO活性和褐变;而贮藏过程中温度波动将导致双孢蘑菇采后开伞率、呼吸强度提高,PPO活性和褐变度增加,对其采后生理和品质造成严重影响。 Effects of storage temperature and temperature fluctuation on postharvest physiology and qualities of Agaricus bisporus were studied. The results showed that lower temperature with higher relative humidity can reduce the decrease of firmness of postharvest Agaricus bisporus, and inhibit its respiration, the activity of PPO and the degree of browning; temperature fluctuation during storage may result in very bad consequence, because it will increase the rate of cap opening, the activity of PPO and the degree of browning.
