摘要 臭氧作为强氧化剂已广泛应用于食品行业的杀菌、除臭、保鲜 ,而臭氧在杀菌除臭保鲜的同时 ,对果蔬品质的影响较小 .分析了臭氧处理对Vc、Ve的影响 ,试验表明臭氧对Vc、Ve纯品和甜玉米浆中的Vc、Ve有很高的降解率 ,而对整穗甜玉米果实中的Vc、Ve则没有影响 . Ozone,as a kind of strong oxidant, is widely used in food industry to disinfect, deodorize and retain fressness ; however, at the same time it has less effects on the qualiey of fruits and vegetables. This paper analyses the effects of ozone treatment. And the experiment shows that ozone can oxide pure Vc, Ve and Vc, Ve in shattered Sweet Corn while it cannot oxide Vc, Ve in whole Sweet corn fruits .
